Garlic Chicken Fried Rice Recipe

Ingredients:

  • For the Rice:
    • 2 cups cooked rice, cooled
    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 onion, finely chopped
    • 1 cup frozen peas and carrots, thawed
    • 2 eggs, beaten
    • 2 tablespoons soy sauce
    • 1 teaspoon oyster sauce
    • 1/2 teaspoon sesame oil
    • Salt and pepper to taste
  • For the Chicken:
    • 1 pound boneless, skinless chicken breast, cut into small cubes
    • 1 tablespoon cornstarch
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 tablespoon soy sauce
    • 1 tablespoon vegetable oil

Instructions:

  1. Prepare the Chicken:
    • In a bowl, combine chicken cubes, cornstarch, salt, pepper, and soy sauce. Mix well and set aside.
  2. Cook the Chicken:
    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and cook until browned and cooked through. Remove from the pan and set aside.  
  3. Cook the Rice:
    • Heat the remaining vegetable oil in the same skillet. Add the minced garlic and onion, and sauté until fragrant.
    • Add the cooked rice, peas, and carrots to the skillet. Stir-fry until heated through.
    • Push the rice mixture to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked.
  4. Combine and Flavor:
    • Combine the cooked chicken with the rice and vegetable mixture.
    • Add soy sauce, oyster sauce, and sesame oil. Stir-fry until well combined and heated through.
    • Season with salt and pepper to taste.
  5. Serve:
    • Serve hot, garnished with chopped green onions, if desired.
