Garlic Chicken Fried Rice Recipe

Ingredients:

  • 2 cups cooked rice (preferably a day old)
  • 1 cup cooked chicken, shredded or cubed
  • 3-4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons vegetable oil or sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat a large pan or wok over medium heat and add a tablespoon of oil. Once hot, add the beaten eggs, scramble until cooked, and then set them aside.
  2. In the same pan, add another tablespoon of oil and sauté the minced garlic until fragrant. Add the chopped onion and continue to cook until softened.
  3. Stir in the mixed vegetables and cook for a few minutes until tender. Add the shredded chicken and stir to combine.
  4. Add the cooked rice to the pan and mix everything well. Pour in the soy sauce and oyster sauce (if using), making sure the rice is evenly coated.
  5. Add the scrambled eggs back into the pan, breaking them into smaller pieces. Stir everything together and season with salt and pepper to taste.
  6. Cook for another 2-3 minutes, stirring constantly to ensure the flavors are well combined and the rice is heated through.
