Ingredients:
- 2 cups cooked rice (preferably a day old)
- 1 cup cooked chicken, shredded or cubed
- 3-4 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 tablespoons vegetable oil or sesame oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions:
- Heat a large pan or wok over medium heat and add a tablespoon of oil. Once hot, add the beaten eggs, scramble until cooked, and then set them aside.
- In the same pan, add another tablespoon of oil and sauté the minced garlic until fragrant. Add the chopped onion and continue to cook until softened.
- Stir in the mixed vegetables and cook for a few minutes until tender. Add the shredded chicken and stir to combine.
- Add the cooked rice to the pan and mix everything well. Pour in the soy sauce and oyster sauce (if using), making sure the rice is evenly coated.
- Add the scrambled eggs back into the pan, breaking them into smaller pieces. Stir everything together and season with salt and pepper to taste.
- Cook for another 2-3 minutes, stirring constantly to ensure the flavors are well combined and the rice is heated through.
- Garnish with chopped green onions before serving. Enjoy your garlic chicken fried rice!
