Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 lb boneless chicken breast, cut into small pieces
- 4-5 cloves garlic, minced
- 1 medium onion, diced
- 1/2 cup peas and carrots (frozen or fresh)
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp sesame oil
- 2 tbsp vegetable oil (for frying)
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions:
- Prepare the ingredients: Ensure your rice is cold and separated. Cut the chicken into small, bite-sized pieces, and mince the garlic.
- Cook the chicken: In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.
- Cook the vegetables: In the same pan, add another tablespoon of vegetable oil. Sauté the diced onions and minced garlic until fragrant and slightly golden. Add the peas and carrots, stirring until they soften.
- Scramble the eggs: Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Fry the rice: Add the cooked rice to the pan. Stir-fry everything together, making sure to break up any rice clumps. Add the cooked chicken back into the pan.
- Season: Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir everything together until the rice is evenly coated with the sauces.
- Finish and serve: Cook for another 2-3 minutes to allow the flavors to meld together. Garnish with chopped green onions and serve hot. Enjoy!
