The savory soy sauce and the crunch of vegetables make this dish both hearty and delicious. This easy recipe brings together simple ingredients in a way that packs a punch of flavor in every bite.

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1 lb boneless chicken breast, cut into small pieces
  • 4-5 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 cup peas and carrots (frozen or fresh)
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil (for frying)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Prepare the ingredients: Ensure your rice is cold and separated. Cut the chicken into small, bite-sized pieces, and mince the garlic.
  2. Cook the chicken: In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.
  3. Cook the vegetables: In the same pan, add another tablespoon of vegetable oil. Sauté the diced onions and minced garlic until fragrant and slightly golden. Add the peas and carrots, stirring until they soften.
  4. Scramble the eggs: Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Fry the rice: Add the cooked rice to the pan. Stir-fry everything together, making sure to break up any rice clumps. Add the cooked chicken back into the pan.
  6. Season: Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir everything together until the rice is evenly coated with the sauces.
  7. Finish and serve: Cook for another 2-3 minutes to allow the flavors to meld together. Garnish with chopped green onions and serve hot. Enjoy!
