Garlic Butter Steak Bites with Potatoes Recipe

This recipe creates tender and flavorful steak bites pan-seared to perfection with crispy potatoes, all coated in a rich and aromatic garlic butter sauce. It’s a quick and satisfying one-pan meal that’s perfect for a weeknight dinner.

Ingredients:

  • 1.5 pounds sirloin steak (or other tender cut), cut into 1-inch cubes
  • 1.5 pounds Yukon Gold potatoes, cut into 1-inch pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions:

  1. Prepare Potatoes: Wash and cut the potatoes into 1-inch pieces. In a large skillet (preferably cast iron), heat the olive oil over medium-high heat. You may need to add a little more oil if the pan becomes dry. Once cooked, remove the potatoes from the skillet and set aside.

  3. Make Garlic Butter: In the same skillet (no need to wipe it clean), melt the butter over medium heat. Add the minced garlic and dried thyme and cook for about 30 seconds, until fragrant (be careful not to burn the garlic).
  4. Sear Steak Bites: Increase the heat to high. Add the steak bites to the skillet in a single layer (work in batches if necessary to avoid overcrowding). Sear for 1-2 minutes per side for medium-rare, or longer depending on your desired level of doneness. The goal is a nice crust on all sides.
  5. Combine and Finish: Once the steak bites are seared, reduce the heat to medium-low. Return the cooked potatoes to the skillet with the steak bites and garlic butter sauce. Toss gently to coat everything evenly.
  6. Add Parsley and Serve: Stir in the chopped fresh parsley. Serve immediately while hot.

  • Steak Cut: Sirloin is a good choice for this recipe, but you can also use other tender cuts like ribeye, New York strip, or filet mignon. Adjust cooking time based on the thickness of the bites.
