Ingredients
- 1 ½ lbs sirloin steak, cut into bite-sized cubes
- 1 ½ lbs baby potatoes, halved
- 4 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 5 cloves garlic, minced
- 1 tsp dried thyme (or fresh)
- 1 tsp dried rosemary (or fresh)
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a pot of salted water to a boil. Add halved potatoes and cook until just tender, about 8–10 minutes. Drain and set aside.
- In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat. Add potatoes, season with salt, pepper, and half the herbs, then sauté until golden brown and crispy. Remove and set aside.
- In the same skillet, add remaining olive oil. Add steak bites in a single layer (cook in batches if needed) and sear 2–3 minutes per side until nicely browned and cooked to your liking. Remove steak from skillet.
- Reduce heat to medium-low. Add remaining butter and garlic, cooking until fragrant (about 30 seconds). Stir in the rest of the herbs.
- Return steak and potatoes to the skillet, tossing them in the garlic butter sauce until well coated.
- Garnish with fresh parsley and serve warm.
