Brussels sprouts often get a bad reputation, but when cooked with garlic butter, they transform into a savory side dish that even the pickiest eaters will love. This recipe highlights the nutty flavor of Brussels sprouts while infusing them with rich, garlicky goodness. Perfect for holiday gatherings or weeknight dinners, these Brussels sprouts will become a staple in your kitchen.
Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tsp red pepper flakes (optional, for heat)
- 2 tbsp freshly grated Parmesan cheese (optional, for serving)
- 1 tbsp lemon juice (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Brussels Sprouts:
- Start by trimming the stem ends of the Brussels sprouts and removing any discolored outer leaves. Cut them in half lengthwise.
- Blanch the Brussels Sprouts (Optional):
- Bring a pot of salted water to a boil. Add the Brussels sprouts and blanch for about 3 minutes. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. This step enhances the color and tenderness of the sprouts.
- Sauté the Garlic:
- In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once the butter has melted and is bubbling, add the minced garlic. Sauté for about 1 minute, or until fragrant but not browned.
- Cook the Brussels Sprouts:
- Add the blanched (or raw, if skipping blanching) Brussels sprouts to the skillet. Toss them in the garlic butter and spread them out evenly. Season with salt, black pepper, and red pepper flakes (if using).
- Sauté Until Tender:
- Cook for about 8–10 minutes, stirring occasionally, until the Brussels sprouts are golden brown and tender. If you prefer them crispy, let them sit without stirring for a couple of minutes at a time.
- Add the Remaining Butter:
- Once the Brussels sprouts are cooked to your liking, add the remaining 2 tablespoons of butter and toss to combine.
- Finish with Lemon and Cheese:
- Remove the skillet from the heat and stir in the lemon juice. If desired, sprinkle the freshly grated Parmesan cheese on top for an extra layer of flavor.
- Garnish and Serve:
- Transfer the Brussels sprouts to a serving dish, garnish with fresh parsley, and enjoy while warm!
