Ganitong Pork Ribs Na Luto Gusto

Ingredients

  • 2 lbs pork ribs, cut into serving sizes
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/2 cup water or stock
  • 2 tbsp sugar (optional, for a sweeter glaze)
  • Salt and pepper to taste
  • Spring onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Prepare the Pork Ribs:
Clean the pork ribs under running water and pat dry with a paper towel. Season lightly with salt and pepper.
  2. Sear the Ribs:
Heat a large pan or wok over medium heat. Add a bit of oil and sear the ribs until lightly browned on all sides. Set aside.
  3. Make the Sauce:
In the same pan, sauté garlic and onion until fragrant. Add soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar (if using), and water or stock. Stir well to combine.
  4. Simmer the Ribs:
Return the seared ribs to the pan and toss to coat them in the sauce. Lower the heat and cover. Let it simmer for 30-40 minutes, stirring occasionally, until the ribs are tender and the sauce has thickened. Add more water or stock if needed.
  5. Adjust Seasoning:
Taste the sauce and adjust seasoning as needed. You can add more sugar for sweetness or soy sauce for saltiness.
  6. Finish and Serve:
Once the ribs are cooked and tender, transfer them to a serving plate. Garnish with sliced spring onions and sesame seeds. Serve hot with steamed rice.
