Fruity Tapioca Jelly Drink

Ingredient

  • 1/2 cup small tapioca pearls
  • 1 cup fruit-flavored jelly (e.g., strawberry, mango, or lychee), cubed
  • 2 cups coconut milk or any preferred milk (almond, soy, etc.)
  • 1 cup mixed tropical fruit (e.g., mango, pineapple, kiwi), diced
  • 2 tablespoons honey or sweetener of choice (optional)
  • 1/2 teaspoon vanilla extract
  • Ice cubes (as needed)

Instruction

  1. Cook the Tapioca Pearls
    • Bring a pot of water to a boil and add the tapioca pearls.
    • Cook according to the package instructions, usually 10-15 minutes, stirring occasionally to prevent sticking.
    • Once the pearls are translucent, drain and rinse with cold water. Set aside.
