- 1/2 cup small tapioca pearls
- 1 cup fruit-flavored jelly (e.g., strawberry, mango, or lychee), cubed
- 2 cups coconut milk or any preferred milk (almond, soy, etc.)
- 1 cup mixed tropical fruit (e.g., mango, pineapple, kiwi), diced
- 2 tablespoons honey or sweetener of choice (optional)
- 1/2 teaspoon vanilla extract
- Ice cubes (as needed)
Instruction
- Cook the Tapioca Pearls
- Bring a pot of water to a boil and add the tapioca pearls.
- Cook according to the package instructions, usually 10-15 minutes, stirring occasionally to prevent sticking.
- Once the pearls are translucent, drain and rinse with cold water. Set aside.
- Prepare the Fruit and Jelly
- Dice your selected tropical fruits and fruit-flavored jelly into small cubes.
- Mix the Drink
- In a large pitcher, combine the cooked tapioca pearls, diced fruits, and jelly cubes.
- Add coconut milk, vanilla extract, and honey (if desired). Stir well to mix all ingredients.
- Serve
- Fill serving glasses with ice cubes. Pour the fruity tapioca mixture over the ice.
- Stir gently to ensure even distribution of the pearls and jelly.
- Garnish and Enjoy
- Optionally, garnish with a sprig of mint or a slice of fruit on the rim of the glass.
