Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream or Greek yogurt
- 1 1/2 cups Fruity Pebbles cereal (plus extra for topping)
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternately add the dry ingredients and the sour cream (or Greek yogurt), starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the Fruity Pebbles cereal and milk, being careful not to crush the cereal too much.
- Pour the batter into the prepared loaf pan and sprinkle the top with extra Fruity Pebbles for a fun, colorful look.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy this sweet, colorful breakfast treat!
