Fruity Pebbles Breakfast Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or Greek yogurt
  • 1 1/2 cups Fruity Pebbles cereal (plus extra for topping)
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternately add the dry ingredients and the sour cream (or Greek yogurt), starting and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the Fruity Pebbles cereal and milk, being careful not to crush the cereal too much.
  7. Pour the batter into the prepared loaf pan and sprinkle the top with extra Fruity Pebbles for a fun, colorful look.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
