Fruity Pebbles Breakfast Bread


Ingredients

  • 2 cups all-purpose flour
  • 1 cup Fruity Pebbles cereal (plus extra for topping)
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Gently fold in 1 cup of Fruity Pebbles cereal.
  4. In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined — do not overmix.
  6. Pour the batter into the prepared loaf pan and sprinkle extra Fruity Pebbles on top for a colorful crunch.
  7. Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
