Fried Rice – Don’t LOSE this recipe

Ingredients

  • 3 cups cooked rice (preferably day-old, chilled)
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (peas, carrots, corn, bell peppers)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2–3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional, for depth of flavor)
  • ½ tsp ground black pepper
  • 2 green onions, sliced (for garnish)
  • Protein of choice (optional: chicken, shrimp, beef, or tofu)

Instructions

  1. Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add the beaten eggs and scramble until cooked. Remove and set aside.
  2. In the same pan, add the remaining oil. Sauté onion and garlic until fragrant.
  3. Add mixed vegetables (and any protein, if using) and stir-fry for 3–4 minutes.
  4. Add the cold rice, breaking up clumps with a spatula. Stir-fry until heated through.
  5. Pour in soy sauce, oyster sauce (if using), and black pepper. Mix well to coat the rice evenly.
  6. Add back the scrambled eggs and toss everything together.
  7. Garnish with green onions and serve hot.
