Ingredients
- 3 cups cooked rice (preferably day-old, chilled)
- 2 tbsp vegetable oil (or sesame oil for extra flavor)
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (peas, carrots, corn, bell peppers)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2–3 tbsp soy sauce
- 1 tbsp oyster sauce (optional, for depth of flavor)
- ½ tsp ground black pepper
- 2 green onions, sliced (for garnish)
- Protein of choice (optional: chicken, shrimp, beef, or tofu)
Instructions
- Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add the beaten eggs and scramble until cooked. Remove and set aside.
- In the same pan, add the remaining oil. Sauté onion and garlic until fragrant.
- Add mixed vegetables (and any protein, if using) and stir-fry for 3–4 minutes.
- Add the cold rice, breaking up clumps with a spatula. Stir-fry until heated through.
- Pour in soy sauce, oyster sauce (if using), and black pepper. Mix well to coat the rice evenly.
- Add back the scrambled eggs and toss everything together.
- Garnish with green onions and serve hot.
