- 2 large potatoes, peeled and cut into 1/2-inch cubes
- 1 large onion, sliced

Instructions:
- Prep the potatoes:
- Peel and cut the potatoes into 1/2-inch cubes.
- Rinse the potatoes in cold water to remove excess starch.
- Pat them dry with a clean kitchen towel.
- Prep the onions:
- Slice the onion.
- Heat the oil:
- Heat the olive oil in a large skillet over medium heat.
- Cook the potatoes:
- Add the potatoes to the hot skillet and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add the onions:
- Add the sliced onions to the skillet and cook for another 5-7 minutes, or until the onions are softened and lightly browned.
- Season and serve:
- Season with salt, pepper, paprika, and garlic powder (if using).
- Cook for an additional 2-3 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
- Serve hot as a side dish.
