Fried Potatoes & Onions Recipe

A classic side dish that’s crispy on the outside and tender on the inside. Perfect for any meal!

Ingredients:

  • 2 large potatoes, peeled and cut into 1/2-inch cubes
  • 1 large onion, sliced
  • 2 tablespoons olive oil  
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon paprika, 1/4 teaspoon garlic powder

Instructions:

  1. Prep the potatoes:
    • Peel and cut the potatoes into 1/2-inch cubes.
    • Rinse the potatoes in cold water to remove excess starch.  
    • Pat them dry with a clean kitchen towel.
  2. Prep the onions:
    • Slice the onion.
  3. Heat the oil:
    • Heat the olive oil in a large skillet over medium heat.
  4. Cook the potatoes:
    • Add the potatoes to the hot skillet and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  5. Add the onions:
    • Add the sliced onions to the skillet and cook for another 5-7 minutes, or until the onions are softened and lightly browned.
  6. Season and serve:
    • Season with salt, pepper, paprika, and garlic powder (if using).
    • Cook for an additional 2-3 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
    • Serve hot as a side dish.

Tips & Variations:

  • For extra flavor, add a pinch of red pepper flakes or a dash of Worcestershire sauce.
  • To make this dish vegetarian, use vegetable oil instead of olive oil.
  • For a heartier dish, add some cooked bacon or diced ham to the skillet.
  • You can also roast the potatoes and onions in the oven for a slightly different flavor.
