- 2 large potatoes, peeled and cut into 1-inch cubes
- 1 large onion, sliced thinly

Instructions:
- Prep:
- Wash and peel the potatoes. Cut them into 1-inch cubes.
- Slice the onion thinly.
- Cook:
- Heat the oil in a large skillet over medium heat.
- Add the potatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften.
- Add the onions and cook for another 5-7 minutes, or until the onions are softened and translucent.
- Season with salt and pepper to taste.
- Finish & Serve:
- If using fresh herbs, add them to the skillet and cook for 1-2 minutes more, until fragrant.
