Fried potatoes and onions

Ingredients

  • 4 large potatoes (peeled and sliced into thin rounds)
  • 1 large onion (sliced)
  • 3 tbsp vegetable oil (or butter)
  • Salt and pepper to taste
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Prep the potatoes: Slice the potatoes into thin rounds. You can leave the skin on for extra flavor, but peeling them is also fine.
  2. Heat the pan: In a large skillet, heat the vegetable oil or butter over medium heat.
  3. Cook the potatoes: Add the sliced potatoes to the skillet, spreading them out evenly. Let them cook for about 5-7 minutes, stirring occasionally. You want them golden and tender on the outside but soft inside. Season with salt, pepper, garlic powder, and paprika.
  4. Add the onions: Once the potatoes are almost done, add the sliced onions to the skillet. Cook them with the potatoes for another 3-5 minutes, stirring often. The onions should soften and caramelize slightly.
  5. Finish and serve: Once the potatoes are crispy and the onions are caramelized, remove from heat. Garnish with fresh parsley, if desired, and serve hot.
