1 cup cottage cheese (preferably smooth or blended)
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/4 cup milk (add more if needed)
1 tablespoon sugar (optional for a sweeter dough)
Oil for frying (vegetable or canola oil works well)
Powdered sugar or honey (optional for serving)
Instructions:
Prepare the dough: In a large mixing bowl, combine the flour, baking powder, salt, and sugar (if using). In another bowl, mix the egg, milk, and cottage cheese until well combined.
Combine ingredients: Gradually add the wet ingredients into the dry mixture, stirring until a soft dough forms. If the dough is too dry, add a little more milk, a tablespoon at a time, until the dough is smooth and slightly sticky.
Shape the dough: Lightly flour your hands and the working surface. Knead the dough gently for 2-3 minutes. Roll it out or pinch off small balls of dough (about the size of a golf ball). Flatten them slightly to form disks.
Heat the oil: In a deep frying pan or pot, heat about 2 inches of oil to 350°F (175°C). Test by dropping a small piece of dough into the oil – it should sizzle and rise to the surface quickly.
Fry the dough: Gently place the dough disks into the hot oil, frying 2-3 at a time. Fry each side for 2-3 minutes or until golden brown. Use tongs or a slotted spoon to turn them over and ensure even cooking.
Drain and cool: Once golden and crispy, remove the fried dough and place them on a paper towel-lined plate to drain excess oil.
Serve: Dust with powdered sugar or drizzle with honey, if desired. These are best enjoyed warm.
