Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1/2 cup shortening or butter (chilled)
- 1/2 cup cold water (add gradually)
For the Filling (choose one):
Apple Filling:
- 2 cups peeled and diced apples
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 1 tbsp butter
- 1 tsp lemon juice
Peach Filling:
- 2 cups peeled and diced peaches
- 1/4 cup sugar
- 1/2 tsp ground nutmeg or cinnamon
- 1 tbsp butter
- 1 tsp lemon juice
For Frying:
- Vegetable oil (for deep frying)
Optional:
- Powdered sugar or cinnamon-sugar for dusting
Instructions
- Prepare the Dough:
- In a bowl, combine flour, salt, and sugar.
- Cut in the shortening or butter until the mixture resembles coarse crumbs.
- Gradually add cold water until dough forms.
- Knead lightly, then wrap in plastic wrap and chill for 30 minutes.
- Make the Filling:
- In a small saucepan over medium heat, combine your chosen fruit (apple or peach), sugar, cinnamon/nutmeg, butter, and lemon juice.
- Cook for 5–8 minutes, until fruit is tender and the mixture thickens.
- Let cool completely.
- Assemble the Pies:
- Roll out dough on a lightly floured surface to about 1/8 inch thick.
- Cut into 4–6 inch circles.
- Place 1–2 tablespoons of filling in the center of each circle.
- Fold over and press edges with a fork to seal.
- Fry the Pies:
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry pies in batches for about 2–3 minutes per side or until golden brown.
- Remove and drain on paper towels.
- Serve:
- Dust with powdered sugar or cinnamon-sugar while warm, if desired.
- Enjoy warm or at room temperature!
