FRIED APPLE or PEACH PIES

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 cup shortening or butter (chilled)
  • 1/2 cup cold water (add gradually)

For the Filling (choose one):

Apple Filling:

  • 2 cups peeled and diced apples
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1 tbsp butter
  • 1 tsp lemon juice

Peach Filling:

  • 2 cups peeled and diced peaches
  • 1/4 cup sugar
  • 1/2 tsp ground nutmeg or cinnamon
  • 1 tbsp butter
  • 1 tsp lemon juice

For Frying:

  • Vegetable oil (for deep frying)

Optional:

  • Powdered sugar or cinnamon-sugar for dusting

Instructions

  1. Prepare the Dough:
    • In a bowl, combine flour, salt, and sugar.
    • Cut in the shortening or butter until the mixture resembles coarse crumbs.
    • Gradually add cold water until dough forms.
    • Knead lightly, then wrap in plastic wrap and chill for 30 minutes.
  2. Make the Filling:
    • In a small saucepan over medium heat, combine your chosen fruit (apple or peach), sugar, cinnamon/nutmeg, butter, and lemon juice.
    • Cook for 5–8 minutes, until fruit is tender and the mixture thickens.
    • Let cool completely.
  3. Assemble the Pies:
    • Roll out dough on a lightly floured surface to about 1/8 inch thick.
    • Cut into 4–6 inch circles.
    • Place 1–2 tablespoons of filling in the center of each circle.
    • Fold over and press edges with a fork to seal.
  4. Fry the Pies:
    • Heat oil in a deep skillet or fryer to 350°F (175°C).
    • Fry pies in batches for about 2–3 minutes per side or until golden brown.
    • Remove and drain on paper towels.
  5. Serve:
    • Dust with powdered sugar or cinnamon-sugar while warm, if desired.
    • Enjoy warm or at room temperature!
