INGREDIENTS
- 2 medium cucumbers, sliced
- 3 medium ripe tomatoes, sliced into rounds
- 1 medium red onion, thinly sliced into rings
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice or vinegar
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or mint (optional, chopped)
INSTRUCTIONS
- Wash all vegetables thoroughly.
- Slice the cucumbers, tomatoes, and onion as directed.
- Place all sliced vegetables in a large mixing bowl.
- Drizzle extra virgin olive oil over the salad.
- Add lemon juice (or vinegar), salt, and black pepper.
- Gently toss everything together until well combined.
- Taste and adjust seasoning if needed.
- Chill for 10–15 minutes before serving for best flavor.

- Use fresh, ripe tomatoes for the best taste.
- If the onion taste is too strong, soak slices in cold water for 5 minutes, then drain.
