Ingredients
- 4 ripe Roma tomatoes, finely diced
- 1 small white onion, finely chopped
- 1–2 jalapeño peppers, seeded and finely chopped (adjust heat to taste)
- ½ cup fresh cilantro, chopped
- 1–2 tablespoons fresh lime juice (about 1 lime)
- Salt, to taste (about ½ tsp)
- Optional: 1 garlic clove, minced
Instructions
- In a medium bowl, combine the diced tomatoes, chopped onion, and jalapeños.
- Stir in the chopped cilantro and lime juice.
- Season with salt and, if using, stir in the minced garlic.
- Mix well, then taste and adjust seasoning or lime juice if needed.
- Let sit for 10–15 minutes before serving to allow flavors to meld.
- Serve fresh with tortilla chips, tacos, grilled meats, or eggs!
