Fresh Cucumber Tomato Salad

Ingredients

  • 2 cups cherry tomatoes, halved (or 3 medium tomatoes, diced)
  • 1 large cucumber, sliced into thin rounds or half-moons
  • ¼ red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley or dill (optional)
  • ½ teaspoon dried oregano (optional)
  • Feta cheese crumbles (optional topping)

Instructions

  1. In a large bowl, combine the sliced cucumbers, halved tomatoes, and red onion.
  2. In a small bowl or jar, whisk together the olive oil, vinegar or lemon juice, salt, pepper, and oregano.
  3. Pour the dressing over the vegetables and toss until everything is well coated.
  4. Let the salad sit for 10–15 minutes to allow the flavors to meld.
  5. Sprinkle with chopped herbs and feta cheese if using.
  6. Serve chilled or at room temperature.
