Ingredients
- 2 cups cherry tomatoes, halved (or 3 medium tomatoes, diced)
- 1 large cucumber, sliced into thin rounds or half-moons
- ¼ red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar or lemon juice
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley or dill (optional)
- ½ teaspoon dried oregano (optional)
- Feta cheese crumbles (optional topping)
Instructions
- In a large bowl, combine the sliced cucumbers, halved tomatoes, and red onion.
- In a small bowl or jar, whisk together the olive oil, vinegar or lemon juice, salt, pepper, and oregano.
- Pour the dressing over the vegetables and toss until everything is well coated.
- Let the salad sit for 10–15 minutes to allow the flavors to meld.
- Sprinkle with chopped herbs and feta cheese if using.
- Serve chilled or at room temperature.
