Ingredients
- 1 large cucumber, peeled and chopped
- 1 cup fresh lemon juice (about 4–6 lemons)
- 1/2 cup honey or sugar (adjust to taste)
- 4 cups cold water
- Ice cubes (optional)
- Lemon slices and cucumber rounds, for garnish
- Fresh mint leaves (optional)
Instructions
- Blend the cucumber:
In a blender, combine the chopped cucumber and 1 cup of water. Blend until smooth. - Strain (optional):
For a smoother drink, strain the cucumber juice through a fine mesh sieve or cheesecloth into a pitcher. - Add lemon and sweetener:
Stir in the fresh lemon juice and honey (or sugar) until fully dissolved. - Add remaining water:
Pour in the remaining 3 cups of cold water. Stir well and taste—add more sweetener if needed. - Chill and serve:
Refrigerate for at least 30 minutes. Serve over ice with lemon slices, cucumber rounds, and mint leaves if desired.
