FRESH CUCUMBER LEMONADE

Ingredients

  • 1 large cucumber, peeled and chopped
  • 1 cup fresh lemon juice (about 4–6 lemons)
  • 1/2 cup honey or sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes (optional)
  • Lemon slices and cucumber rounds, for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Blend the cucumber:
    In a blender, combine the chopped cucumber and 1 cup of water. Blend until smooth.
  2. Strain (optional):
    For a smoother drink, strain the cucumber juice through a fine mesh sieve or cheesecloth into a pitcher.
  3. Add lemon and sweetener:
    Stir in the fresh lemon juice and honey (or sugar) until fully dissolved.
  4. Add remaining water:
    Pour in the remaining 3 cups of cold water. Stir well and taste—add more sweetener if needed.
  5. Chill and serve:
    Refrigerate for at least 30 minutes. Serve over ice with lemon slices, cucumber rounds, and mint leaves if desired.
