FRESH CUCUMBER LEMONADE

Ingredients

  • 1 large cucumber, peeled and chopped
  • 1 cup freshly squeezed lemon juice (about 4–6 lemons)
  • 1/2 cup honey or sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes, for serving
  • Mint leaves, for garnish (optional)
  • Lemon slices, for garnish (optional)

Instructions

  1. Blend the cucumber:
    Place chopped cucumber in a blender with 1 cup of cold water. Blend until smooth.
  2. Strain the juice (optional):
    For a smoother lemonade, strain the cucumber juice through a fine mesh sieve into a large pitcher. Discard the pulp.
  3. Mix in lemon and sweetener:
    Add the freshly squeezed lemon juice and honey (or sugar) to the pitcher. Stir until the sweetener is fully dissolved.
  4. Add remaining water:
    Pour in the remaining 3 cups of cold water. Stir to combine.
  5. Chill and serve:
    Add ice cubes and garnish with lemon slices and mint if desired. Serve cold and enjoy!
