Ingredients
- 1 large cucumber, peeled and chopped
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1/2 cup honey or sugar (adjust to taste)
- 4 cups cold water
- Ice cubes, for serving
- Mint leaves, for garnish (optional)
- Lemon slices, for garnish (optional)
Instructions
- Blend the cucumber:
Place chopped cucumber in a blender with 1 cup of cold water. Blend until smooth. - Strain the juice (optional):
For a smoother lemonade, strain the cucumber juice through a fine mesh sieve into a large pitcher. Discard the pulp. - Mix in lemon and sweetener:
Add the freshly squeezed lemon juice and honey (or sugar) to the pitcher. Stir until the sweetener is fully dissolved. - Add remaining water:
Pour in the remaining 3 cups of cold water. Stir to combine. - Chill and serve:
Add ice cubes and garnish with lemon slices and mint if desired. Serve cold and enjoy!
