  • 3 large yellow onions, thinly sliced
  • 2 tablespoons olive oil or butter, plus more for greasing the dish
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • 1 ½ cups beef or vegetable broth
  • ½ cup heavy cream or milk
  • 1 tablespoon Dijon mustard (optional)
  • 1 cup shredded Gruyère cheese or sharp cheddar cheese (or a combination)

Instructions:

  3. Prepare the Potatoes: While the onions are caramelizing, peel and thinly slice the potatoes. A mandoline slicer can be helpful for achieving uniform thickness. Rinse the potato slices under cold water and pat them dry to remove excess starch.
  4. Make the Sauce: In a separate bowl or directly in the skillet with the caramelized onions (if there’s enough liquid), whisk together the beef or vegetable broth, heavy cream or milk, and Dijon mustard (if using). Season with a little more salt and pepper if needed.
  5. Layer the Potatoes and Onions: Arrange a layer of the thinly sliced potatoes in the bottom of the prepared baking dish, slightly overlapping the slices. Spread about half of the caramelized onions evenly over the potatoes. Pour about one-third of the sauce over the onions and potatoes.
