Instructions
- Caramelize the Onions:
- In a skillet, melt butter over medium heat. Add onions and cook slowly, stirring occasionally, for about 20-25 minutes until golden and caramelized.
- Sprinkle sugar (if using) to enhance caramelization. Season with thyme, salt, and pepper.
- Pour in beef broth and simmer until mostly evaporated. Set aside to cool.
- Prepare the Meatloaf Mixture:
- Preheat oven to 375°F (190°C).
- In a bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper.
- Fold in half of the caramelized onions and 1/2 cup shredded Swiss cheese.
- Shape and Bake:
- Form the mixture into a loaf shape and place it on a parchment-lined baking sheet or in a loaf pan.
- Bake for 40 minutes.
- Add Cheese and Finish:
- Remove meatloaf from the oven and top with the remaining caramelized onions and slices of Swiss cheese.
- Return to the oven for another 10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Let the meatloaf rest for 5-10 minutes before slicing.
- Garnish with fresh parsley if desired.
