French Onion Meatloaf with Melted Swiss Cheese


Ingredients

For the Onion Mixture:
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar (optional, for caramelization)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup beef broth
For the Meatloaf:
  • 1 1/2 pounds ground beef (80/20 works best)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese (divided)
For Topping:
  • 4-6 slices Swiss cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Caramelize the Onions:
    • In a skillet, melt butter over medium heat. Add onions and cook slowly, stirring occasionally, for about 20-25 minutes until golden and caramelized.
    • Sprinkle sugar (if using) to enhance caramelization. Season with thyme, salt, and pepper.
    • Pour in beef broth and simmer until mostly evaporated. Set aside to cool.
  2. Prepare the Meatloaf Mixture:
    • Preheat oven to 375°F (190°C).
    • In a bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper.
    • Fold in half of the caramelized onions and 1/2 cup shredded Swiss cheese.
  3. Shape and Bake:
    • Form the mixture into a loaf shape and place it on a parchment-lined baking sheet or in a loaf pan.
    • Bake for 40 minutes.
  4. Add Cheese and Finish:
    • Remove meatloaf from the oven and top with the remaining caramelized onions and slices of Swiss cheese.
    • Return to the oven for another 10 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Let the meatloaf rest for 5-10 minutes before slicing.
