French Onion Meatloaf Recipe

This French Onion Meatloaf elevates the classic comfort food with the rich, savory flavors of French onion soup. It features a moist and flavorful meatloaf topped with caramelized onions and melted cheese, creating a delicious and satisfying meal.  

Ingredients:

  • 1.5 pounds ground beef (80/20 blend recommended)
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced  
  • 1/2 cup breadcrumbs  
  • 1/4 cup milk  
  • 1 egg, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard  
  • 1 teaspoon dried thyme  
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper  
  • 1/4 cup beef broth
  • 8 ounces Gruyère or Swiss cheese, shredded

Instructions:

  1. Caramelize Onions: Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-30 minutes. Add the minced garlic during the last minute of cooking. Remove half of the caramelized onions and set aside for topping.  
  2. Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Add the remaining caramelized onions to the mixture. Mix well until thoroughly combined.
  3. Shape the Meatloaf: Shape the meat mixture into a loaf in a 9×13 inch baking dish.
  4. Add Beef Broth: Pour the beef broth around the meatloaf in the baking dish.
  5. Bake: Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).  
  6. Top with Cheese and Onions: Remove the meatloaf from the oven and top with the shredded Gruyère or Swiss cheese and the reserved caramelized onions.
  7. Broil (Optional): Broil for 2-3 minutes, or until the cheese is melted and bubbly.
  8. Rest and Serve: Let the meatloaf rest for a few minutes before slicing and serving.  

Tips and Notes:

  • Ground Beef Blend: Using an 80/20 ground beef blend provides a good balance of flavor and moisture.
  • Cheese Variations: You can use other cheeses like provolone or mozzarella instead of Gruyère or Swiss.
  • Breadcrumbs: You can use fresh or dried breadcrumbs.  
  • Make Ahead: You can prepare the meatloaf mixture ahead of time and store it in the refrigerator until ready to bake.
  • Storage: Store any leftover meatloaf in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.  
  • Serving Suggestions: Serve the French Onion Meatloaf with mashed potatoes, roasted vegetables, or a side salad.
