- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar (adjust to taste)
- 1 egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chocolate chips (optional but recommended)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
- Mix in the sugar, egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture, stir to combine.
- Add the flour and mix just until incorporated. Do not overmix.
- Fold in chocolate chips gently.
- Spoon the batter evenly into the muffin cups.
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before enjoying warm!
