  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chocolate chips (optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the sugar, egg, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture, stir to combine.
  5. Add the flour and mix just until incorporated. Do not overmix.
  6. Fold in chocolate chips gently.
  7. Spoon the batter evenly into the muffin cups.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
