Forget banana bread

Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 large egg
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together melted butter and brown sugar until smooth.
  3. Add in the egg, mashed bananas, and vanilla extract. Mix until combined.
  4. Stir in salt, flour, baking powder, and cinnamon (if using). Fold in nuts or chocolate chips if desired.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool completely in the pan before cutting into squares.
