- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon sugar
- ½ teaspoon salt
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Combine Wet Ingredients: In another bowl, beat the egg and then whisk in the milk, melted butter, and vanilla extract.
- Make the Batter: Pour the wet ingredients into the dry ingredients. Gently stir until just combined — do not overmix. A few lumps are okay.
- Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Cook the Pancakes: Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes, or until golden brown and cooked through.
- Serve Warm: Stack the pancakes and serve with butter, maple syrup, fruits, or your favorite toppings.
