- 1 cup cottage cheese
- 3 large eggs
- ½ cup all-purpose flour
- 1 tbsp sugar (optional, for a touch of sweetness)
- ½ tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt

- Mix Wet Ingredients:
In a large bowl, whisk together the cottage cheese, eggs, and vanilla extract until combined. - Add Dry Ingredients:
Add flour, sugar, baking powder, and salt. Gently mix until a thick batter forms. Don’t overmix—some lumps are okay! - Preheat Pan:
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. - Cook Pancakes:
Spoon 2–3 tablespoons of batter per pancake onto the skillet. Flatten slightly with the back of the spoon. Cook for 2–3 minutes per side or until golden brown and cooked through. - Serve Warm:
Serve with honey, maple syrup, fresh fruit, or a dollop of Greek yogurt.
