  • 3 large eggs

  • 2 tbsp milk (any kind)
  • 1 tbsp sugar (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Mix the Batter:
    In a large mixing bowl, whisk the eggs, then add cottage cheese, milk, sugar, and vanilla extract. Stir to combine.
  2. Add Dry Ingredients:
    Add flour, baking powder, and a pinch of salt. Mix gently until just combined. Do not overmix — the batter will be a bit lumpy from the cottage cheese.
  3. Heat the Pan:
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  4. Cook the Pancakes:
