- 1 cup cottage cheese
- 3 large eggs

Instructions
- In a large mixing bowl, whisk the eggs until well combined.
- Add cottage cheese, milk, sugar, and vanilla extract (if using). Stir until combined.
- In a separate bowl, mix the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and gently stir until you have a thick batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about ¼ cup of batter for each pancake onto the skillet. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
- Flip and cook for another 1–2 minutes, until golden brown and cooked through.
