Fluffy Coconut Cream Cake

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, room temperature
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional, for extra coconut flavor)
  • 1 cup coconut milk (or whole milk)
  • 1 cup sweetened shredded coconut

For the Frosting:

  • 1 ½ cups heavy whipping cream
  • ¼ cup powdered sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut, toasted (optional)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter & sugar: In a large bowl, use an electric mixer to beat the butter and sugar together on medium-high speed until light and fluffy, about 3-4 minutes.
  4. Add eggs: Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla and coconut extracts and mix to combine.
