Fluffy Cloud Cake Recipe

A light, airy cake with a delicate vanilla flavor, reminiscent of clouds. Perfect for any occasion!

Ingredients:

  • For the Cake:
    • 121​ cups all-purpose flour
    • 121​ cups granulated sugar
    • 121​ teaspoons baking powder
    • 21​ teaspoon baking soda
    • 21​ teaspoon salt
    • 21​ cup unsalted butter, softened
    • 1 cup buttermilk
    • 2 large eggs
    • 1 teaspoon vanilla extract
  • For the Frosting (Optional):
    • 1 cup heavy cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
    • Fresh fruit for topping (optional)

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to $350^\circ$F ($175^\circ$C).
    • Grease and flour a 9-inch round cake pan.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In a separate bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.  
    • Stir in the vanilla extract.  
  4. Combine Wet and Dry:
    • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
    • Mix until just combined. Do not overmix.  
  5. Bake:
    • Pour the batter into the prepared cake pan.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  6. Prepare Frosting (Optional):
    • In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Frost and Serve:
    • Once the cake is completely cooled, frost it with the whipped cream.
    • Top with fresh fruit, if desired.
    • Slice and serve.
