Fluffy Cloud Cake Recipe

Indulge in the ethereal lightness of this fluffy cloud cake! This dreamy dessert is a perfect blend of airy sponge cake and creamy frosting, topped with a whimsical cloud-like meringue. Each bite is a cloud nine experience!

Ingredients:

For the Sponge Cake:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract  
  • 1/2 cup milk

For the Cream Cheese Frosting:  

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

For the Meringue:

  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar

Instructions:

Make the Sponge Cake:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Combine dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.  
  4. Alternate wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Beat until just combined.
  5. Bake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. 6. Cool: Let the cake cool completely in the pan before inverting onto a wire rack.  

Make the Cream Cheese Frosting:

  1. Cream cheese and butter: In a large bowl, beat together the cream cheese and butter until smooth and creamy.
  2. Add sugar and vanilla: Gradually beat in the powdered sugar and vanilla extract until the frosting is light and fluffy.

Make the Meringue:

  1. Whip egg whites: In a clean, dry bowl, whip the egg whites with a mixer on high speed until foamy.
  2. Add cream of tartar and sugar: Gradually add the cream of tartar and sugar, one tablespoon at a time, continuing to whip until stiff peaks form.

Assemble the Cake:

  1. Level and frost cake: Level the cooled cake and place it on a serving plate. Frost the top and sides of the cake with the cream cheese frosting.
  2. Pipe meringue: Pipe the meringue onto the top of the cake to create a cloud-like effect.
  3. Torch meringue: Use a kitchen torch to lightly brown the meringue for a toasted marshmallow flavor.
