Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp ground black pepper (optional)
  • 1 ½ cups shredded cheddar cheese (or your favorite cheese)
  • 1 cup milk
  • 2 large eggs
  • ⅓ cup melted butter (or vegetable oil)
  • 2 tbsp chopped chives or green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Stir in the shredded cheese and chopped chives if using.
  4. In another bowl, whisk together the milk, eggs, and melted butter until well combined.
  5. Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined — don’t overmix!
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18–22 minutes, or until the muffins are golden on top and a toothpick inserted in the center comes out clean.
