- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt

- 1 ½ cups shredded cheddar cheese (or your favorite cheese)
- 1 cup milk
- 2 large eggs
- ⅓ cup melted butter (or vegetable oil)
- 2 tbsp chopped chives or green onions (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Stir in the shredded cheese and chopped chives if using.
- In another bowl, whisk together the milk, eggs, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined — don’t overmix!
- Divide the batter evenly among the muffin cups.
- Bake for 18–22 minutes, or until the muffins are golden on top and a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm and enjoy!
