Fluffy Blueberry Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup milk (cold)
  • 1 teaspoon vanilla extract (optional)
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Pour in the cold milk and vanilla extract (if using). Gently stir until just combined — do not overmix.
  5. Carefully fold in the blueberries.
  6. Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle.
  7. Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet.
  8. If desired, sprinkle the tops with coarse sugar for a sweet crunch.
  9. Bake for 15–18 minutes or until golden brown.
  10. Serve warm with butter or a drizzle of honey!
