Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup milk (cold)
- 1 teaspoon vanilla extract (optional)
- 1 cup fresh or frozen blueberries
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the cold milk and vanilla extract (if using). Gently stir until just combined — do not overmix.
- Carefully fold in the blueberries.
- Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle.
- Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet.
- If desired, sprinkle the tops with coarse sugar for a sweet crunch.
- Bake for 15–18 minutes or until golden brown.
- Serve warm with butter or a drizzle of honey!
