Fluffy Blueberry Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk (or buttermilk for extra fluffiness)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon coarse sugar for sprinkling (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Make a well in the center, pour in the milk and vanilla extract, and stir gently until just combined — do not overmix.
  5. Gently fold in the blueberries. If using frozen, don’t thaw them.
  6. Turn the dough onto a lightly floured surface and pat it into a 1-inch thick round.
  7. Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet.
  8. Sprinkle tops with coarse sugar if desired.
  9. Bake for 12–15 minutes or until golden brown.
  10. Serve warm with butter, honey, or a drizzle of glaze if you like!
