Fluffy Blueberry Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk (plus extra if needed)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Gently stir in the buttermilk and vanilla (if using) until just combined — do not overmix.
  5. Carefully fold in the blueberries.
  6. Turn the dough onto a lightly floured surface. Pat it into a 1-inch thick circle and cut out biscuits using a round cutter.
  7. Place the biscuits on the prepared baking sheet. Sprinkle tops with coarse sugar if desired.
  8. Bake for 15–18 minutes or until golden brown.
  9. Serve warm with butter, honey, or a drizzle of glaze if you like!
