Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk (plus extra if needed)
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Gently stir in the buttermilk and vanilla (if using) until just combined — do not overmix.
- Carefully fold in the blueberries.
- Turn the dough onto a lightly floured surface. Pat it into a 1-inch thick circle and cut out biscuits using a round cutter.
- Place the biscuits on the prepared baking sheet. Sprinkle tops with coarse sugar if desired.
- Bake for 15–18 minutes or until golden brown.
- Serve warm with butter, honey, or a drizzle of glaze if you like!
