Ingredients

  • 4 large eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk (or orange juice for citrus flavor)
  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (180°C). Grease and flour a round or loaf cake pan.
  2. Blend wet ingredients: In a blender, combine the eggs, sugar, oil, milk (or juice), and vanilla extract. Blend until smooth and frothy—about 1 minute.
  3. Add dry ingredients: Add flour, baking powder, and salt into the blender. Blend briefly (10-15 seconds) until just combined. Do not overmix.
  4. Pour into pan: Pour the batter into the prepared cake pan. Tap the pan gently on the counter to remove air bubbles.
  5. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired.
