Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- A pinch of salt
(Optional: Cocoa powder for chocolate version or lemon zest for a citrus flavor)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a blender, combine milk, eggs, sugar, vegetable oil, and vanilla extract. Blend until smooth.
- Add flour, baking powder, and salt to the blender. Pulse a few times until fully incorporated. Do not over-blend.
- Pour the batter into the prepared cake pan.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10–15 minutes before removing from the pan. Slice and serve.
Tips:
- For extra fluffiness, sift the flour before adding.
- Make a chocolate version by adding 2–3 tbsp of cocoa powder.
