- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter (plus more for the skillet)

- 1 medium apple (peeled, cored, and grated or finely chopped)

Instructions
- Mix dry ingredients:
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. - Combine wet ingredients:
In another bowl, beat the egg, then add milk, melted butter, and vanilla extract. Mix well. - Make the batter:
Pour the wet ingredients into the dry and stir gently until just combined. Fold in the grated or chopped apple. Do not overmix — the batter should be a little lumpy. - Cook the pancakes:
Heat a nonstick skillet or griddle over medium heat and lightly grease with butter. Pour about ¼ cup of batter per pancake. Cook for 2–3 minutes until bubbles form on the surface and the edges look set. Flip and cook another 1–2 minutes until golden brown and cooked through. - Serve warm:
Top with your favorite toppings like maple syrup, cinnamon, or extra apples.
