- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg (optional)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or plain yogurt)
- 2 cups peeled and finely chopped apples (Granny Smith or Honeycrisp work great)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or round baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
- Beat in the eggs one at a time, then mix in the vanilla and sour cream until well combined.
- Gradually stir the dry ingredients into the wet mixture until just combined—do not overmix.
- Fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared pan and spread evenly.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or serve warm with a scoop of vanilla ice cream for extra comfort!
