Fluffy Apple Cake recipe

Ingredients

  • 2 large apples (peeled, cored, and thinly sliced)
  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (120ml) milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, beat the eggs with the sugar until light and fluffy.
  3. Add oil and milk, then mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon (if using), and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the apple slices, reserving a few for the top of the cake.
  7. Pour the batter into the prepared pan and arrange the reserved apple slices decoratively on top.
  8. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
