Ingredients

  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • 2 cups peeled and finely chopped apples (Granny Smith or Honeycrisp work great)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or round baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  4. Beat in the eggs one at a time, then mix in the vanilla and sour cream until well combined.
  5. Gradually stir the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Fold in the chopped apples and nuts (if using).
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar or serve warm with a scoop of vanilla ice cream for extra comfort!
