Ingredients
- 2 cups rolled oats (gluten-free if needed)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup unsweetened applesauce
- 1/4 cup honey or maple syrup (optional, for sweetness)
- 1 teaspoon vanilla extract
- 1/2 cup milk (dairy or non-dairy)
- 1/4 teaspoon ground cinnamon (optional, for added flavor)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a loaf pan (8×4 inches) with parchment paper or lightly grease it.
- Prepare Dry Ingredients: In a large bowl, combine the rolled oats, baking soda, baking powder, salt, and ground cinnamon (if using). Mix well.
- Combine Wet Ingredients: In a separate bowl, whisk together the eggs, applesauce, honey (or maple syrup), vanilla extract, and milk until smooth and well-combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until everything is fully incorporated. You’ll notice the oats will start to absorb the moisture and form a batter-like consistency.
- Pour Into Pan: Transfer the batter into the prepared loaf pan and spread it evenly with a spatula.
- Bake: Place the pan in the oven and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Slice: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
This bread is great for a healthy breakfast, packed with oats and natural sweetness from applesauce and honey!
