- 2 cups rolled oats (or oat flour)
- 2 large eggs
- 1 cup Greek yogurt (or plain yogurt)
- 1/4 cup honey or maple syrup
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional, for extra flavor)
- 1 teaspoon vanilla extract
- 1/4 cup milk (if needed for consistency)
- 1/4 cup chopped nuts or seeds (optional)
Instructions
- Preheat Oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly.
- Prepare Oats: If using whole oats, blend them in a food processor until they become a flour-like consistency.
- Mix Wet Ingredients: In a large bowl, whisk together eggs, yogurt, honey (or maple syrup), and vanilla extract.
- Combine Dry Ingredients: Add the oat flour, baking soda, baking powder, salt, and cinnamon. Stir until just combined. If the batter is too thick, add milk gradually.
- Fold in Extras: If using nuts or seeds, mix them in gently.
- Bake: Pour the batter into the prepared loaf pan. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let the bread cool for 10 minutes before removing it from the pan. Slice and enjoy!
