  • 1 cup Greek yogurt (or plain yogurt)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional, for extra flavor)
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (if needed for consistency)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat Oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly.
  2. Prepare Oats: If using whole oats, blend them in a food processor until they become a flour-like consistency.
  3. Mix Wet Ingredients: In a large bowl, whisk together eggs, yogurt, honey (or maple syrup), and vanilla extract.
  4. Combine Dry Ingredients: Add the oat flour, baking soda, baking powder, salt, and cinnamon. Stir until just combined. If the batter is too thick, add milk gradually.
