Flourless Cake Recipe

Ingredients:

  • 1 cup (6 oz) semisweet or dark chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Melt the chocolate and butter together in a heatproof bowl over simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.
  3. Stir in the sugar, vanilla extract, and salt until well combined.
  4. Add the eggs, one at a time, mixing well after each addition until the mixture is glossy.
  5. Sift in the cocoa powder and fold gently until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until the top is set and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool in the pan for about 10 minutes, then invert onto a wire rack to cool completely.
