Ingredients
- 2 pounds chicken wings (split at joints, tips removed)
- 1 tablespoon baking powder (aluminum-free)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Optional: ½ teaspoon cayenne pepper or chili powder (for heat)
- Your favorite wing sauce or dip (e.g., buffalo, BBQ, ranch, blue cheese)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack with cooking spray.
- Pat chicken wings very dry with paper towels. The drier they are, the crispier they’ll get.
- In a large bowl, mix the baking powder, salt, garlic powder, paprika, black pepper, and cayenne/chili powder if using.
- Toss the chicken wings in the spice mixture until evenly coated.
- Arrange wings in a single layer on the prepared rack.
- Bake for 20 minutes. Flip the wings and bake for another 20–25 minutes or until golden and crispy.
- Optional: Broil for 2–3 minutes at the end for extra crispiness.
- Remove from oven and toss immediately in your favorite wing sauce or serve dry with dips on the side.
