Ingredients

  • 2 cups all-purpose flour

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Make batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each. Mix in the vanilla and yogurt (or sour cream).
  3. Dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined — don’t overmix.
  4. Assemble cake: Pour half of the batter into the prepared pan. Layer half of the sliced apples on top. Mix the brown sugar and cinnamon together, and sprinkle half over the apples. Pour the remaining batter on top and spread gently. Arrange the remaining apples on top and sprinkle with the rest of the cinnamon sugar.
  5. Bake: Bake for about 40–50 minutes or until a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, cover loosely with foil for the last 10 minutes.
