- 1 medium eggplant, cut into bite-sized cubes

- 1 cup shredded mozzarella cheese

- 1 cup marinara sauce (for dipping)

- Prep the Eggplant: Slice the eggplant into bite-sized cubes. Place them in a colander, sprinkle with salt, and let them sit for about 20-30 minutes to draw out excess moisture. Afterward, pat the cubes dry with paper towels.
- Prepare Breading Station: In one shallow bowl, place the flour. In a second shallow bowl, whisk the eggs. In a third shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, oregano, red pepper flakes, salt, and pepper.
- Coat the Eggplant: Dip each eggplant cube first into the flour, then the beaten eggs, and finally coat it thoroughly in the breadcrumb mixture. Repeat until all the cubes are breaded.
- Fry the Bites: In a large skillet, heat olive oil over medium heat. Fry the eggplant bites in batches until golden brown and crispy, about 3-4 minutes per side. Once done, place them on a paper towel-lined plate to drain excess oil.
- Serve: Arrange the fried eggplant bites on a plate. Sprinkle with additional Parmesan cheese if desired, and serve with marinara sauce for dipping.
