Ingredients

  • 1 medium eggplant, cut into bite-sized cubes
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup marinara sauce (for dipping)
  • Olive oil for frying

Instructions

  1. Prep the Eggplant: Slice the eggplant into bite-sized cubes. Place them in a colander, sprinkle with salt, and let them sit for about 20-30 minutes to draw out excess moisture. Afterward, pat the cubes dry with paper towels.
  2. Prepare Breading Station: In one shallow bowl, place the flour. In a second shallow bowl, whisk the eggs. In a third shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, oregano, red pepper flakes, salt, and pepper.
  3. Coat the Eggplant: Dip each eggplant cube first into the flour, then the beaten eggs, and finally coat it thoroughly in the breadcrumb mixture. Repeat until all the cubes are breaded.
  4. Fry the Bites: In a large skillet, heat olive oil over medium heat. Fry the eggplant bites in batches until golden brown and crispy, about 3-4 minutes per side. Once done, place them on a paper towel-lined plate to drain excess oil.
  5. Serve: Arrange the fried eggplant bites on a plate. Sprinkle with additional Parmesan cheese if desired, and serve with marinara sauce for dipping.
