Made with a delightful mix of tutti fruti (candied fruits), this cake is soft and tender, offering a sweet and fruity burst in every bite. It’s a great option for those who prefer eggless desserts and is simple to prepare.
Ingredients
- 1 ½ cups all-purpose flour (maida)
- ½ cup sugar (or as per your taste)
- ½ cup unsweetened yogurt (or curd)
- ½ cup milk
- ½ cup vegetable oil (or melted butter)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup tutti fruti (candied mixed fruits)
- ¼ teaspoon lemon zest (optional)
Instructions
- Preheat the oven to 180°C (350°F). Grease and line a loaf pan with parchment paper.
- Mix the dry ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Prepare the wet ingredients: In another large bowl, whisk together the yogurt, sugar, milk, vegetable oil, and vanilla extract until well combined.
- Combine the dry and wet ingredients: Gradually fold the dry mixture into the wet ingredients. Mix until smooth and well combined. If the batter is too thick, you can add a little more milk.
- Add the tutti fruti: Toss the tutti fruti in a little flour to prevent them from sinking to the bottom of the cake. Gently fold them into the batter.
- Bake the cake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve your eggless tutti fruti loaf cake!
