- 4 large eggs

Instructions
- Place the eggs in a saucepan and cover with water. Bring to a boil, then cover, turn off the heat, and let sit for 10-12 minutes.
- Drain and cool the eggs under cold water. Peel and chop them.
- In a bowl, combine chopped eggs, mayonnaise, mustard (if using), chives, salt, and pepper. Mix well.
- Toast the bread slices if you like.
- Spread the egg salad on two slices of bread. Top with lettuce if desired. Cover with the remaining bread slices.
- Cut in half and serve immediately.
