This light and refreshing egg salad is packed with healthy ingredients, making it a perfect meal or snack. It features hard-boiled eggs, crisp vegetables, and a creamy yogurt-based dressing for a protein-rich dish that’s both satisfying and nutritious.

Ingredients

  • 4 large eggs, hard-boiled and chopped
  • 1 cucumber, diced
  • 1 small red bell pepper, diced
  • 1 avocado, diced
  • 2 tablespoons Greek yogurt (or low-fat plain yogurt)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or parsley)
  • Salt and pepper to taste
  • Mixed greens (optional)

Instructions
