- 1/4 cup grated Parmesan cheese (optional)
- 1 egg (or flax egg for vegan option)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp cumin
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine the mashed potatoes, carrots, spinach, corn, onion, and garlic.
- Add breadcrumbs, Parmesan (if using), egg, salt, pepper, paprika, and cumin. Mix until well combined.
- Scoop out small portions and form into patties. If the mixture feels too wet, add more breadcrumbs.
- Coat each patty lightly with extra breadcrumbs for a crispy exterior.
- Heat olive oil in a non-stick skillet over medium heat.
- Fry the patties for about 3–4 minutes on each side, or until golden brown and cooked through.
- Drain on paper towels and serve hot with your favorite dip or salad!
