  • 2 tbsp olive oil (for frying)

Instructions

  1. In a large bowl, combine the mashed potatoes, carrots, spinach, corn, onion, and garlic.
  2. Add breadcrumbs, Parmesan (if using), egg, salt, pepper, paprika, and cumin. Mix until well combined.
  3. Scoop out small portions and form into patties. If the mixture feels too wet, add more breadcrumbs.
